The food MENU
B.Sc. Hotel Management institute in Punjab

Today, we see a mounting inclination in people to eat outside whether it is fine dine, fast food or enjoying at a restaurant bar.  The menu is a complement to the surrounding environment.

According the plan of the location a menu can be of various classes:

1. Table d’hôte (i.e. Table of the Host) or ‘menu du jour'
With limited choice and fixed number of courses, this menu has a fixed selling price for all dishes combined and is ready to serve in a set amount of time.

2. À la carte Menu (i.e. From the Card)
This menu offers an extensive choice of items with each dish being priced separately. Some item may take longer times to serve.

3. A menu can also be combined with a mix of dishes served at a fixed price while other priced individually.

4. Tasting Menu ( usually 6-10 courses)
The chef may give the guests the opportunity to taste a sample of the meal. This menu may also be accompanied with selection of wines.

5. Breakfast Menu or afternoon tea menu

6. Airline, Hospital, Rail Service Menu
A trolley and kiosk is an important must have.

7. Event Menu

TIP
A menu has to map the requirement of the audience that you will be serving. The choice to eat any food is a relation between health and eating and can be influenced culturally, religiously and ethically or medically, in case of allergies. You may not want to forget that people are vegetarian and that the menu item may have seasonal items or ingredients that may not be readily available locally.

Radiance with a Stir Fry

Best B.Sc. Hotel Management and Catering TechnologyStir fry makes food rich, delectable and distinctly flavorful making it a  consuming infatuation for many across the globe. The magic that oil and temperature can do to vegetables or meat is evident in its mesmerizing aroma, when ingredients begin to caramelize, flavors intensify and the dish picks up color and texture.

Deftly Seasoned
Ingredients dice, cube, strip or slice?
Cooking with no sense of refined artistry cannot go with stir fry which is ideally subtle and sophisticated. You can't expect to be rewarded for a soggy or a lumpy dish. Although basics go down to stirring vegetables or meat in even heat while they are cooking, every stir fry calls for ingenuity. Seasoning like garlic, ginger, scallions, onions, wine, egg, soy sauce, black bean sauce, vinegar and cornstarch are broadly used in different ways and combinations. Cooking times also call for a grateful consideration, while working with a different assortment of vegetables. Carrots, onion and cauliflower are cooked for longer durations in comparison to mushroom, zucchini, tomatoes or green onions which stir fry instantly.

The Oil
A high Smoke Most Important Consideration
Oil tends to break down and turn bitter if it's heated above its smoke point not only loosing flavor but also diminishing its nutritional value . Heating above the smoke point causes  a bluish smoke to arise. The oil may also produce carcinogens at this point.
So, picking the right oil for any type of cooking is also an essential skill to imbibe.
Extremely Refined oils have a higher smoke point since the ingredients that smoke up have been removed from it.
Stir fry is traditionally done with peanut oil. However, different oils like vegetable, corn, sesame or canola may be used that complement the ingredients and flavors of the dish.

The utensil
A wok or skillet?
The utensil has to be something light weighted in which heat can be evenly distributed and vegetables can be tossed vigorously without creating a mess. Stir fry come with a lot of splatter so the utensil has to ensure that hot oil sizzle doesn't reach the hands while stirring or tossing. A  wok's flared sides make it an ideal utensil in comparison to a skillet which doesn't have flared sides. Others things like a lid, spatula, colander and set of slotted spoons also come handy.

Hospitality as a profession doesn't embody the boring nine to five jobs with  the same routines. Professionals in this field have robust experiences and take up new challenges on a daily basis. At Desh Bhagat, institute of Hotel Management and Catering Technology students dive into fundamental concepts of hospitality looking into essential aspects that transform hotel experiences.

Like challenges? Try baking a cake!

Hotel Management Course in Punjab

A gooey cake with melted dressing and candies faithfully marks an august celebration but can also miraculously transform moods rescuing from the conundrums of life on a dull day.  Cake cutting generously inspires any celebration or a milestone...whether it is two lovers uniting in the holy bond of matrimony, or a child who has just turned one, a friend's reunion, an inauguration function or a home coming party and for any good reason.
From a simple pound cake to a towering beauty, a cake can literally engage any audience.

So how good is your bake?
Made from the simplest of ingredients like sugar, flour, baking powder, baking soda, salt, butter, essence, cocoa etc, a cake is a delectable delicacy on any table. There is a lot of science that goes through combining these simple ingredients to attain a satisfying outcome. It's like chemistry, physics and maths all together in one place.

Still wondering how good is your bake? A cake can be judged from the difficulty of techniques that have been used in bringing about its final appearance. The neatness, the board at its base, the colours, the icing, the decorative figures used and the handwork. But most importantly what one might forget is its originality! Copied ideas are never the same as creating your own.

Bakery & Confectionery Course in Punjab
There is still a lot to go! Is the design balanced? Is the cake covered well? Are colours in harmony with each other? Is the work on cake as close to life as possible? Is the icing free of spatula marks, finger prints or air bubbles, smooth and non greasy? Is the sugar well combined? The cake decoration is crucial, but should never be overpowering. Handwork should be free of drying cracks. You can think of enormous things to correct while baking a cake but the most important thing to remember is that nothing is so poorly done that it cannot be encouraged further. While nothing is so finely done that it cannot be improved!
And baking is fun.. a hobby enjoyed by millions across the world and a desert loved by far greater number of people that actually make it...and since we are thinking of taking it on a commercial level it has to be at its best.

Hotel Management and Tourism College in PunjabSo have you persevered enough to bake a cake over and over again, but never seem to get it right? Maybe it's too soggy, or breaks, tastes weird, is browned too much, overcooked or looks like a crater! Baking is an art, a carefully weighed passion requiring precision but also following the heart. At Desh Bhagat Institute of Airlines, Tourism and Hotel Management we  delve into the core skills of bakery and confectionery molding each recipe to its finesse by transforming taste, texture, look and feel. #Hotel #Management and #Toursim in #Desh #Bhagat being a highly acclaimed #Course in #Punjab and North #India awards mastering the culinary art of baking by inquisitive cooks cementing a strong foundation for success.
